Celebrate big and don’t let anyone tell you otherwise

All my life, I remember seeing people roll their eyes at the “extra” parents—the ones who turn ordinary celebrations into over-the-top, Pinterest-worthy events. I used to wonder… why go that far?

Then I became a parent.
And I got it.

Suddenly, I wanted to be that “extra” mom—the one who stayed up too late stringing streamers, who obsessed over cake toppers and color palettes, and who planned every little detail like it was a red-carpet event.

But I still found myself second-guessing.
Should I spend this much?
Will he even remember this cake?
Does this tiny detail really matter?

You know what? YES. Yes, it does.
Because if my son remembers even one thing from this celebration—one single laugh, one bright- fiesta color, one bite of cake or smash—then every bit of effort was worth it. These aren’t just parties… they’re the pages of his childhood.

They’re the stories I hope to hear one day when he’s older and says, “Mom, do you remember that one time…?”

So, in the spirit of celebrating those memories, I wanted to share one of my favorites with you—our Taco TWOSday party!

When my son turned two, one of his absolute favorite foods was rice and beans from our local Mexican restaurant. I'm not even kidding—if we drove past it, we’d hear excited little chants from the backseat: “Rice and beans! Rice and beans!”

So, when it came time to pick a party theme, I knew exactly what we had to do. Taco TWOSday it was!

I wanted the whole day to feel like magic for him, from the moment he opened his eyes. So, I got to work.

My cousin, who is an amazing baker and true artist, brought the vision to life. We dreamed up a two-tiered fiesta cake with cactuses, sombreros, and even a mini piñata on top. It was vibrant, fun, and absolutely delicious—just like the day itself.

We filled the room with colorful streamers, festive décor, and gold “2” balloons. And one of the most meaningful touches? The cake was cut with his very special birthday knife.

It was a gift from my baby shower—a keepsake meant to cut every birthday cake growing up, and one day, his wedding cake. The note that came as part of the knife read:

“This is a special cake knife, as you will surely see…
I’ll use it to cut my birthday cakes for many years to be.
While I am so tiny, it’s hard to believe,
One day I’ll be all grown up and making plans to leave.
When I marry my princess, she’ll become my wife,
And then to cut our wedding cake, I’ll use my birthday knife.”

Cue the tears. I still can’t read that without getting emotional.

We had a full-on fiesta menu—hard and soft tacos, seven-layer dip, RICE AND BEANS, nachos, queso, salsa, and more. If you left hungry, that was on you!

Since the weather didn’t cooperate, we moved the bounce house indoors and filled the space with balloons and balls. The littles had the best day.

Yes, it was a lot of work. Yes, it was a lot of detail.
But it was also joy. And laughter. And love.

It was a memory I’ll treasure forever.

I thank God every single day for giving me this incredible little boy to celebrate—and for surrounding him with people who love him just as fiercely.
